Chicken and Pumpkin Lasagna
Ingredients:

500gm chicken, finely sliced
400gm pumpkin, thinly sliced
400gm tined diced tomatoes
1 ½ cups of grated tasty/mozzarella cheese
200 gm zucchini, thinly sliced
100gm onion, dice
100gm red capsicum, diced

1/8 cup oregano
1/8 cup parsley
1 clove garlic, peeled and crushed
Olive Oil

Method:

  • Fry chicken in a little olive oil until browned, add herbs and onion and capsicum.
  • Fry until tender, add tomatoes and simmer till thick.
  • In a greased lasagna dish, place a layer of pumpkin slices and cover with half of the chicken mixture.
  • Place over a layer of zucchini and add ½ cup cheese
  • Cover with remaining chicken mixture
  • Cover with pumpkin slices and remaining cheese
  • Bake in oven for 40 mins at 180OC

  Serves 6

  Meat can be substituted for Chicken
