Thai Fish Cakes

Ingredients:
500 grams firm white fish (flake is a good option)
4 kaffir lime leaves, shredded
1 tbsp chopped asian basil or coriander
2 tbsp red curry paste
100 grams green beans, finely sliced
2 spring onions, finely chopped

Method:
Place the fish in a food processor and process until smooth, approx 20 seconds
Add the kaffir lime leaves, herbs and curry paste and process for 10 seconds
Transfer the fish mixture to a bowl and add the beans and spring onions
Mix well
Using wet hands form 2 tablespoons of the mixture into patties
Shallow fry in coconut oil until golden brown on both sides

To Serve:
