Vietnamese Coconut Curry

Ingredients:

Meat of your choice - about 3 decent size pieces
1 stalk lemongrass (3 inches), chopped and crushed
2 cloves garlic, minced
1 onion, slivered
1/2 inch piece ginger root, peeled and sliced
1 Tablespoon fish sauce
1/4 - 1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
250g can coconut milk
coconut oil for cooking
Red Pepper to taste

Method:

Combine all ingredients except oil and coconut milk in a bowl.  Let the meat marinate for 30 minutes.

Heat oil in a skillet or wok over high heat and cook meat, add in coconut milk and cook on low heat until it has reduced slightly.

Serve with vegetables.
